April 22 first became Earth Day in 1970, the birth date of the modern environmental movement. What better time to celebrate clean food and delicious flavor by looking in the spring garden at the power of mushrooms in cooking. Mushrooms grow underground, all around on farms, indoors, and even on logs -- if you are a shiitake. And they can be sniffed out by dogs -- if you are a truffle. Spring is mushroom season. So we have a few great recipes for you. Experiment, and they will help you discover your most unusual tastebud: your umami, which may even change the way you cook.
