We made up this dish and called it an eggserole because it is all in one pan. With potatoes and ham, plus herbs and broccoli added to whisked eggs – we feel like we made breakfast. But it’s dinner!
BTW, we chose those purple fingerling potatoes to slice thinly and cook on top, and go along with our purple theme for May.
