Maple Gingerbread Cake with Spiced Pear Sauce
To make this recipe, refer to our recipe for Basic Gingerbread, below. This sauce is equally delicious over pancakes, waffles, crepes, fruit, or ice cream.
Drain the pears and reserve the liquid. In a medium saucepan coated with DuPont™ Teflon® non-stick, combine the pears, liquid, honey, and spices. Simmer gently over medium-low heat for about 12 minutes, or until the sauce is reduced by half. Add the butter slowly and stir well after additions. Spoon warm over the cake.
Basic Gingerbread Cake recipe
Combine 3/4 cup maple syrup with 1/4 cup molasses, 2 tablespoons minced fresh ginger, 1 cup sour cream, and 1 beaten egg. Sift together 2-1/2 cups all-purpose flour, 1-1/2 teaspoons baking soda, 2 teaspoons fresh ground ginger, 1/2 teaspoon each cinnamon and salt. Add wet ingredients to blend, and then add 1 stick of room-temperature melted butter. Pour into a 9-inch baking pan coated with DuPont™ Teflon® non-stick. Bake at 350 degrees for 30 to 40 minutes or until done in the center. Top with a thick layer of powdered sugar, and for the season, garnish with raspberries and a green herbal sprig.
