Sweet Basil Cookies
Servings: 3 dozen cookies
Served with a warm or cool cup of green tea infused with mint, these cookies are a delicious afternoon respite in the garden or at the beach.
Directions
At medium speed of electric mixer, beat the butter until fluffy; add 3/4 cup of the sugar, beating well. Add the egg, orange rind, orange juice, and basil leaves.
Combine the flour, baking soda, and salt; gradually add to the butter mixture, beating until blended to form a dough. Cover and chill the mix for 1 hour.
Combine the nuts with the remaining sugar.
Preheat the oven to 350 degrees. Remove the dough from the fridge and shape into 1-inch balls; roll each one in the nut mixture; place 2 inches apart on a cookie sheet coated with DuPont™ Teflon® non-stick. Flatten slightly with your hands. Bake for 10 minutes or until golden brown. Remove to wire racks to cool.
