Blackberry Veggie Salad

Blackberries are delicious warmed. That’s why you like them so much in a pie. They melt in your mouth! With this salad, you can get the kids to eat their spinach and veggies. Blackberries even trump Popeye’s strong arm in this salad!

 

Ingredients

1 tablespoon olive oil
8 cups baby spinach
2 cups broccoli florettes
1 cup roasted peppers, cut julienne style
1/2 cup finely chopped peaches
2 cups chopped cooked chicken breast
Raspberry or other vinaigrette dressing of choice
1/2 pint fresh blackberries

Directions

In a medium skillet coated with DuPont™ Teflon® non-stick, heat the oil over medium and wilt the spinach for 1 minute; add the broccoli just to warm up a bit. Remove from the stovetop.  Transfer to a salad bowl and stir in the peppers, peaches, and chicken. Toss with just enough dressing to coat lightly; top with the blackberries.
