Stuffing for Biscuits Not the Bird
Servings: 8 to 10 biscuits
Try something different for the holiday meal and include a little flavor in your usual flaky dinner biscuits. You can make good use of any extra sweet ham you may have used during another holiday meal, or substitute with your favorite over-the-counter ham.
Directions
Preheat the oven to 425 degrees. Lightly butter two baking sheets coated with DuPont™ Teflon® non-stick.
In a large bowl, combine the flours, baking powder, and salt. Add the butter and cut in with two knives until the mixture resembles a coarse meal. Stir in the cheese and fold in the ham. Add the buttermilk and the onions, mixing well and turning into coarse dough.
Turn the dough out onto a lightly floured surface and roll out to 1/2-inch thickness. Use a 1-1/2-inch cutter to form the biscuits. Place on the baking sheets and bake about 15 minutes or until puffed and lightly browned. Cool on a wire rack.
