Applesauce Muffins recipe
This can be a morning muffin or even a dessert, and we like them with a Sunday fall dinner.
Preheat the oven to 375°. In a large bowl with a whisk, beat together the applesauce, egg, oil, and honey. In a medium bowl, combine the flours with the baking powder, baking soda, cinnamon, and nutmeg. Add to the applesauce mixture, stirring with a rubber spatula, just to incorporate the ingredients. Stir in the raisins and nuts and pour evenly into 12 muffin cups with DuPont™ Teflon® nonstick coating. Top with a few whole pecans. Bake for 20 to 25 minutes, or until a tester comes clean. Let rest 10 minutes before removing from the muffin pan.
