Far East Dreams Chicken Salad

From our Far East Dreams Style Guide this fresh, light salad is wonderful for lunch guests. Serve with a ginger iced tea for a refreshing pick-me-up.

 

Ingredients

4 chicken breasts, boneless skinless, cooked and broken into small pieces
3 carrots, sliced thinly
3 green onions and tops, chopped
1/4 cup sesame seeds, toasted
3 oz chow mien noodles
1 medium head iceberg lettuce, broken into small pieces
1 cup coarsely chopped red cabbage

Citrus Dressing:
2 tbsp orange marmalade
1 tsp Dijon mustard
4 tbsp cider vinegar
1 tsp ground ginger
1 tsp salt
1/2 tsp pepper
1/2 cup vegetable oil


Directions

In a large bowl toss together the mixed greens, red cabbage, carrots, and green onion. Add chicken pieces. Break uncooked ramen noodles into small pieces; add to salad.

Mix dressing and pour over the salad; toss to coat. Sprinkle sesame seeds over all.

Citrus Dressing:
In a small bowl, mix together marmalade, mustard, and ginger. When paste has formed add cider vinegar, salt and pepper, and oil. Mix well.
