Take-A-Hike Happy Horror Snack

  Looking like something out of Little Shop of Horrors, the 1986 nerdish movie about a giant plant that eats people, we could not resist snapping a photo of this bulbous cruciferous that seems like its wry smile is about to turn into a satisfying grin after munching on something!

Not hard to see how this giant green inspired the movie and then us, for our own “still film.” The veggie looks ominous, but we also see the better side – delicious and nutritious.

So what to do with it? Well, first off, do not be afraid. It will not bite; it is you who will want to do the biting, when we show you how to transform it or “costume” it into a roasted veggie chips snack for a day of fall hiking: Remove the outer leaves and discard. Cut the cabbage in half through the core. Insert the tip of the knife and cut away the core on both halves. Cut the cabbage like sliced bread – ¼-inch thick so that you can fan the strands out slightly with your fingers. Place on a baking sheet with DuPont™ Teflon® nonstick coatings and drizzle with olive oil and salt. Bake in a 350° oven for 15 minutes or so -- just to crisp but not brown. Store in a container and toss into the backpack along with some of that camping cookware we mentioned.
